These are a great raw snack in the morning or pre-workout. They contain carrots for beta carotene, medjool dates for energy, copper and fibre, and coconut oil for medium chain fatty acids providing energy and fat-burning benefits. These freeze well and need to be kept in the fridge. They disappear fast though, and are a hit at every gathering I bring them to.

CARROT CAKE SNACK BALLS

(makes 12)

½ cup coconut, unsweetened
½ cup walnuts
5 medjool dates, de-pitted and chopped
½ inch piece of ginger, peeled
1 tsp vanilla
1 tsp cinnamon
¼ cup almond milk
2 carrots, peeled and roughly chopped
¼ tsp ground allspice or cloves
1/8 cup honey

2 tbsp hemp hearts or shredded coconut

Mix all ingredients except hemp hearts (or the shredded coconut if using) in food processor until easy to roll. Roll in hemp hearts or shredded coconut.

Store in fridge for up to 1 week.
